Pumpkin Pie Baked Oatmeal

I’m horrible about eating breakfast.  I know it’s the most important meal of the day, but as someone who is almost literally never hungry, it takes me a while to be in the mood to eat anything.  But, tonight that all changes.  Haha.  Ok, probably unlikely that it will ever all change, but I am going to try to start eating breakfast.

What started this change of heart? Bikram Yoga.  I really hate it.  Like honestly despise it, but I do enjoy the ways that it helps my long suffering lower back (actually, I began this tumblr in May of 08 (I think) as I was recovering from a massive surgery).  So, in an effort to stave off what I can of the inevitably worsening arthritis in my spine, I’m heading back to the yoga studio this winter. 

Tons of people say that Bikram Yoga “cures” you of craving bad food.  In my opinion, that’s not true.  You still crave it.  You still want to skip breakfast and have a nice sandwich for lunch, but you know you’ll want to puke if you do.  I’m not joking.  If you are reading this and say you love it, you’re lying.  You love how you feel afterward, but I don’t buy that anyone loves it while you’re losing 4lbs of sweat on average.  So, instead, regular Bikram Yoga goers, Yogis if you will, eat more healthy in order to not die.  That’s the truth. 

Anyway, I’m a huge fan of oatmeal but sometimes don’t love the texture so I’ve been getting into baked oatmeal of late.  It’s delicious, flavorful, and healthy.

Tonight I made a Pumpkin Pie Baked Oatmeal, and here is my recipe.

  • 1 15oz can of pumpkin pie mix (you can also buy canned pumpkin and add your own seasoning but the mix is easier)
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 tsp salt
  • 3/4 tsp baking powder
  • 1/2 tsp vanilla
  • 2 1/2 cup Non fat milk
  • 2 cups oats
  • 1/2 cup Bob’s Red Mill 10 Grain Hot Cereal*

*Bob’s Red Mill 10 Grain Hot Cereal adds some extra whole grains but if you don’t have it you can just add a full 2 1/2 cup oats instead.

  1. Preheat oven to 350.
  2. In large bowl wisk pumpkin, brown sugar, eggs, salt, baking powder, and vanilla until smooth.
  3. Stir in milk.
  4. Mix in Oats and Bob’s Red Mill 10 Grain Hot Cereal.
  5. Spray 8x8 glass baking dish (or other baking dish).  Pour in mixture. It will be a little soupy.
  6. Cover with foil and bake for 30 minutes.  After 30 minutes remove foil and bake for an additional 15 minutes. When finished the baked oatmeal will be firm but a little wet still.
  7. Serve immediately warm, or refrigerate and warm up portions as you go.  Also great if you add a little milk to the warm baked oatmeal. 

Makes 6-8 servings.

The best part is that it is delicious, around 250 calories per serving, and with over 10 grams of the ever important fiber. 

I use this basic formula for any kind of baked oatmeal I make.  Making Cran-Apple? Substitute Pumpkin for applesauce, or yogurt, add fruit, and a bit of cinnamon and nutmeg!
